Fun Zumba Party

My mom and I went to a Zumba class at the Fitness 19 gym. It was a special class to celebrate Christmas. Most of us wore Christmas-themed clothes and hats, and I wore my festive ugly sweater with bells and lights. Our Zumba instructor, Myrtle, played some Christmas music. We danced to all the Christmas songs. I danced very crazily, yelled very happily, and danced with a very nice old lady. I was sweating and uplifted. After the dance, we had a fun raffle. I won a gift bag of beauty products. I was so excited.  After the raffle, we had a potluck. There were pork, fried shrimp, cheesy potatoes, noodles, samosas, spring rolls, and rice, along with some cookies and coconut pudding. It was so delicious!    As we ate, we chatted with friends. I even made a new friend, Randy. What a wonderful Zumba party!

Comforting Simple Omelet

Today I made two omelets for breakfast, one for me and one for my mom. It's very simple to make. First, I cracked two eggs into the tin bowl and beat them. I also prepared some spinach and cheese. Second, I cooked the eggs in a pan on the stove for two minutes.  Third, I added spinach and cheese to one side of the omelet and folded it.  Last, I put the omelet on the white plate with some dragon fruit. My mom and I enjoyed this warm, delicious omelet on a winter morning. It's so comforting!

Independent Grocery Shopping

Last Sunday, I took the Handy Ride to Walmart Neighborhood Market to shop for groceries. I prepared a shopping list and requested a round trip from Handy Ride the day before shopping. I took my shopping cart to Walmart.  I bought grapes, bread, cheese, vegetables, yogurt, and a box of chimichangas. During my shopping, I checked the sodium content on the cheese package.  And I bought the diet tea and zero-sugar orange juice.  I bought everything on my shopping list. I rode the Handy Ride back home. I enjoyed grocery shopping by myself. 

Five-Colored Fried Rice

I made the fried rice with five ingredients: seaweed, shrimp, edamame, eggs, and brown rice. These ingredients have five different colors. First, I cut the seaweed into small pieces on the big plate.  Next, I put the cooked shrimp and edamame next to the seaweed. Then I beat the eggs in a tin bowl and fried them first. After the eggs were cooked and fluffy, I added the remaining ingredients to the pan.  At last, I added salt and sesame oil for flavor.   I enjoyed colorful fried rice with  apple slices. It's savory and fragrant.

Working Out at the Palazzo Gym

On Sunday, I went to the Palazzo gym to work out. I worked out on the treadmill, elliptical bike, and seated leg curl machine in the gym. I saw my friend Spencer on the treadmill and I said Hi to him. He smiled at me.     The other day, I saw my friend Ian, and I said hello to him as I was exercising on the treadmill. He said hello back.  Usually, I spend 30 minutes to one hour at the gym. I work out hard and sweat. After  working out, I feel refreshed, energized, and accomplished.  I feel safe, happy,  and  encouraged when encountering my friends there.  I will exercise daily to maintain my health and fitness.      

Mexican Pork Rind Soup

Last week, I made the pork rind soup with kimchi.  I learned how to cook it from a YouTube video.       First, I cooked the ground pork in the pan with my spatula on the stove.  Next, I added the pork rind and kimchi to the pan and let my soup simmer on  medium heat.  Finally, I put my soup into my bowl and enjoyed it. It's a little bit sour and spicy, very tasty. The pork rind is chewy and full of collagen. It's a delicious Mexican soup. I would highly recommend it to my family and my friends.

My New Apartment

A new school year starts!  On Saturday, I moved back to the Palazzo Apartment. I moved into a new apartment with my former wayfinder roommates Kate and Kayla.  I have a new roommate named Natalia. She is very lovely, and she decorates the living room with our favorite music album.  Our kitchen is clean and organized. We have a whiteboard for the chores schedule. I like my bedroom because I can walk around freely in my room. My parents helped me unload my stuff and decorated my room.   I like the view of the farm from my bedroom window. I enjoy looking at the tree, the geese flying overhead, and the beautiful pumpkin patch. It's a wonderful bedroom! I kissed my parents when they left. After they left, I hung out with my roomie, Kayla. We watched movies on TV  in the living room. We watched The Proud Family, The Princess Diaries, and Cruella movies. I enjoyed watching movies with my roommate, Kayla. I like my new apartment and my roommates!
