Muffins for the Halloween Party

I planned to join the Halloween potluck party. I made fresh blueberry muffins and chocolate muffins for the party. First, I prepared the batter. Next,   I put the blueberries in the batter and folded them into the batter. Then, I poured the muffin mix into the muffin mold and baked them in the oven. Look, the muffins were done - fluffy and golden brown. I also baked chocolate muffins for sharing. It smelled pleasant.  Finally, I dressed up in Elsa’s costume. Ready to go!

Meatloaf A’ LA Mom

I tried a new recipe called Meatloaf A’ L Mom. First, I washed potatoes, shallot, garlic, and parsley. Next, I cut the potatoes into thick wedges, minced the shallot and garlic, and roughly chopped parsley. After I roasted the potatoes in the oven, I baked the meatloaves and brushed them with ketchup. When they were done, I sliced the meatloaves crosswise. Then I roasted the green beans, tossed them with olive oil, and seasoned them with salt and pepper. I also made the gravy. Finally, I divided the meatloaves and green beans between plates and spooned gravy over the meatloaves. Our family enjoyed them.

Going on a Nature Hike

My family and I went to Coyote Hills for a walk on a sunny and windy day. I felt energetic and cool because I wore my favorite Golden State Warriors hat and jacket. On the walk, I saw a few deer in the distant field and a white heron with a long neck.   We went to the visitor center to see some animal exhibits. There is a lot of fish in the aquarium tank. Then we went to another room to watch a video. The lady in the video made acorn flour food that native people ate.  After the video, we went to the butterfly nectar garden. Because it was getting cold, there was no butterfly, but the flowers were still blooming.  The garden was decorated with fall decorations like pumpkins. In addition, the birds were chirping happily. The fountain was beautiful, with flowers engraved. I played with the fountain water in the bowl with a leaf. I  also played with a wind chime on the tree branch, which echoed with the joyful tinkling sound. I had a pleasant hike with my family.  

Pork Sausage Cottage Pie

Today I tried pork sausage cottage pie, a dish originally came from the United Kingdom.   First, I washed the potatoes and diced them into pieces.  I also striped the thyme leaves. Next, I cooked the potatoes in salt water. Then,  I mashed the potatoes with sour cream and butter. After I cooked the vegetables and seasoned them with salt and pepper,  I removed the  sausage  casing and  mixed vegetables with sausage as a filling. Finally, I topped the sausage filling with mashed potatoes and broiled it until browned. It's savory and tasty. Success!

Special Olympics Soccer Competition

I joined the Northern California Special Olympics Soccer Competition Sunday at the Mistlin Sports Park in Ripon. There were many teams from different counties and cities.  Our team is called UC Kicks because we represent Union City. Our UC Kicks team includes two groups. Group one is a large and advanced team. Group two is an entry-level team. I belonged to group two.  We had six people on our team. Five players were on the field, and one substitution was made. First, we competed with the Santa Clara Team. We were excited, energetic, and active. We ran fast and kicked the ball hard.  Our opponent was wild too. When I was a defender, I passed the ball to my teammates. They shot the ball and scored.  After halftime, we continued competing with them and won the game. We lined up to shake hands with them and said, “Good game.”  Then, we competed with Stanislaus Team on the field. It was a strong team. We four girls fought so hard against the four men.   We tried our best to shoot the ball
