Chinese New Year Celebration

Last Tuesday was the Lunar New Year. I celebrated this Chinese New Year by making a special tofu hot pot.     It all started in the morning when my mom surprised me with a red envelope full of money. I decided to make a special dish to celebrate the Chinese New Year. I had a tofu hot pot kit on hand to cook, so I added more ingredients to make it special. First, I cut the tofu into cubes while I brought water to a boil in a large metal pot. Next, I added the cooked shrimp, mushrooms, and green vegetables to the boiling water. Lastly, I added the tofu with all the ingredients, including the hard-boiled eggs, and the soup base for my hot pot.  I enjoyed my hot, cozy special tofu hot pot. For dessert, I had candied hawthorn on a skewer. I had a special and happy Chinese New Year celebration!

First-Time Enchiladas Success

Last Friday,  I made the enchiladas for the first time.  My friend Nikki gave me a lot of help. First, I cooked the ground pork. Next, we made the enchilada sauce,  poured it into the baking pan,  and spread it evenly. Then we assembled the tortillas with meat and cheese. We made all the enchiladas, added more cheese on top, and put them in the glass baking pan. Finally, we placed it in the oven and baked it.  After baking, the cheese was golden and gooey. The enchiladas were savory and very delicious. I ate two cheesy enchiladas for dinner. I saved others to enjoy later. I felt it was very easy to make.  It was  totally successful!    

Egg-cellent Ways to Cook Eggs

I like to cook eggs for breakfast. It's high in protein and easy to cook at home. A few weeks ago, I made a classic omelette using all the eggs. First, I beat all the eggs in a metal bowl, then added the oil to the pan and cooked them over  the stove. It was done in a few minutes.   I enjoyed eating my classic omelette with raspberries and chocolate milk. Another time, I added vegetable pieces and all the ingredients to make fluffy eggs. It's light and airy, like clouds. It's so crispy!   Sometimes, I add lunch meat and cheese to the eggs. After it's done, I roll it like a burrito. It's so much fun!
